Thai spiced, strawberry soup – Gluten | Casein | Lactose | Grain free

A couple of years back, my beautiful blue-eyed friend, Veronika, blogger and photographer at ‘Kitchen Finesse‘ posted a tempting photograph in flickr.  The title read ‘strawberry coconut milk soup’.  You know what caught my eye, right?  Every word, actually.  I am fond of soups, like strawberries and absolutely love coconut milk!  There was no thing to stop me from making this.  I wrote at  once to Vera and she sent me the recipe in her reply.  I have made many times since but for some reason or the other, I did not take photographs until recently.

I am sure you will love the Thai twist in this.  Vera’s recipe makes use of heavy cream.  I added homemade coconut cream instead, in less proportion. This soup is in fact a dessert, and if you churn it in your ice cream maker, it will turn into a very tasty ice cream, I think.

Recipe: Vegan strawberry soup with a Thai twist – Gluten | Lactose | Casein free

Allergy friendly recipe

 Yield: serves 2 to 3 persons


 Coconut milk (second extract) – 2 cups

Lemon grass root, 1 stalk, crushed lightly

Kaffir lime leaf – 1, bruised

Strawberries – 300g ( I used organic strawberries from Godrej Nature’s Basket)

Coconut cream, fresh (made the same morning) – 1 cup

Sugar (optional) – As per taste


In a steel saucepan add the lemon grass and kaffir lime to the coconut milk and bring to the boil on low heat, stirring every noinsew and then.

Rinse, clean, and pat dry the strawberries, and add in a mixer with some of the coconut  cream.  Puree.

Pour the strawberry puree and the remaining cream to the coconut milk, add sugar (if using), and warm in low heat as homemade coconut cream curdles at high temperatures, and the danger is more if the strawberries are sour!

Press the liquid in a bowl through a large eyed soup strainer.  Bring to room temperature, and let refrigerate for a few hours.

When ready to serve, swirl a little coconut cream and garnish with cut strawberries.

Strawberries are available in Indian market only during Winters, hence I have categorized it as a Winter soup.  Is it a Summer fruit where you live?

    I am guessing the lemon grass is the secret ingredient here!!! I could never think of a soup with strawberries and when you combine it with coconut cream…yum. Being a palakkad iyer I am also a die hard fan of coconut!!
